Pumpkin Cookies

1 stick (1/2 cup) of unsalted butter, at room temperature
1 cup granulated sugar
¾ cup light brown sugar, lightly packed
3 large eggs
1 cup of pumpkin puree (canned or fresh)
1 teaspoons pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
¼ tsp of baking soda
1 teaspoon ground cinnamon
1 teaspoon kosher salt
¼ tsp of allspice
3 cups old-fashioned oatmeal


  1. In a large bowl, beat the brown sugar and granulated sugar into the butter. Then beat in the eggs followed by the vanilla extract and the pumpkin puree.
  2. Combine the all-purpose flour, baking powder, baking soda, cinnamon, allspice, and salt.
  3. Mix the flour mixture into the butter mixture.
  4. Mix the oatmeal into the dough.
  5. Freeze for 30 minutes
  6. Use a tablespoon to scoop dough into a lightly greased baking sheet.
  7. Bake in a preheated 350˚F oven for 15 minutes or until a toothpick inserted in the middle comes out clean.

Makes about 3 dozen cookies
